Rice polishing ratio : Koji rice 55%, Kake rice 70%.
Alcohol percentage : 15.0
The Junmai Hi-ire which has been laid down for a year is now open ^ ^.
It is not as smooth as Junmai Ginjo, but a little roughness is good to remove corners.
It has a gaseous taste, and the miscellaneous taste in a good sense spreads the flavor and is delicious.
I thought I might like this more than the Junmai Ginjo.
I served it with Takeda miso, a little ahead of the brewery, on cotton tofu as a side dish. Soybean on soybean and delicious 😋.
