I have been meaning to try this sake for some time, but only the daiginjo is now being sold at a nearby liquor store.
It has a sweet and sour taste intertwined with a bitter taste that comes later.
The bitterness on opening the mouth is cemedine-like and a bit peculiar.
After 3-4 days, the sweetness increases and the bitterness settles down.
The more you let it sit, the better it tastes and the better it is.
