W Ancestral Hidamori 50 Junmai Unfiltered Nama-shu Hidaminori" is the ancestor of Gifu Prefecture's sake rice "Hidahomare", which became extinct for a time but was successfully re-grown in 2020, and Watanabe Sake Brewery is the only sake brewery in Japan that uses this rice variety. Brewing techniques: The historic barrel brewing method is used, and the sake is pressed with shingled dyed cotton from the Edo period (1603-1868), resulting in a unique sweetness and smooth texture. Flavor profile: Mild on the palate, the sake has a delicate texture, with aromas of melon and other fruits, and a beautiful overall sweetness and rhyme.
