4. Merry Crescent by Koei Chrysanthemum. The mouthfeel is refreshing with a good acidity and a sense of effervescence. Not too sweet like Omachi, but well balanced with umami and some bitterness, with a bit of Christmas-like creaminess and a good finish that doesn't pull away. Omachi, unfiltered, unfiltered raw sake, about 2,600 yen, Otsuka Sake Brewery in Honmachi.
