So today, on the third day of opening the bottle, I decided to drink it in earnest...
The first day we opened the bottle, it had a strong alcoholic taste, or rather, the complex taste of Yamahai, so we thought it might settle down after a while. I thought it would settle down after a while, so I decided to drink it today.
The aroma was mellow, like it had been aged for a long time, and the taste was mild, but the flavor was rich, and the acidity was moderate, so it was not tiring to drink, and it was the perfect food sake for well-seasoned Japanese food, such as boiled and stewed dishes.
I found myself with only one glass left...
