It's been a long time since I've been to Koubou Kiku.
I was looking forward to it because I drank Ikumou last year and it was delicious.
This year's sake rice is called Kitashizuku from Hokkaido.
I was told that the true taste of the sake comes after a week of opening the bottle.
I opened the bottle today, and it has a strong lactic acid feeling and citrus acidity.
Astringent afterwards.
It's delicious in its own right, but I'm going to drink it slowly while enjoying the taste changes.
