I took a sip and thought, "Wow, it's sweet but deep! I thought. I don't like the sake feeling that lingers too much and have a habit of letting it go down my throat too quickly, but this time I made sure to let it roll around on my tongue. The bitterness came immediately after the sweetness, and the flavor spread quickly before it went down my throat, which was also interesting!
I tried handmade rakkyo to go with it, but it's not quite the same, as it blurs the deliciousness of the crop. I think it would be more delicious with rice or sashimi!
