Diajiku Junmai-shu <Healing, dusty, soft, local sake. Nice to meet you, Mr. Diaigiku from Toda Sake Brewery in Nagano, Japan. Sorry, I did not even know their name. What can I say, it has a unique retro appearance. It is full of Showa-era atmosphere. That's what I'm interested in! The aroma is a pleasant, dusty sweetness, like breadcrumbs. It is a calming aroma. In the mouth, the soft, gentle sweetness and the alcohol without any curdle are soothing. It feels nostalgic. It's like coming to your grandma's house during summer vacation. It's not particularly exciting in the countryside, but it's exciting, gentle, and calming. When warmed by hand, the flavor and alcohol taste opens up a bit and it is mild. It is more suitable at room temperature than cold sake. It would also be good lukewarm. It was delicious! I liken it to the scene in Ghibli's "My Neighbor Totoro" where Kanta's grandmother and I are eating freshly picked vegetables together. Gentle time passes.
