It is a bottle of sake that has been perfected to perfection as a food sake. It is designed in the manner of a sake brewery that values the Izumo climate, which is also the origin of the brewery's name, and has pursued "a quality of sake that goes well with food" rather than being flashy.
The sake rice used is Sato Nishiki produced in Yamagata Prefecture. In the mouth, the sharp, ultra-harsh outline of the sake is clearly apparent, along with the gentle aroma typical of junmai ginjo-style sake.
The taste is light and dry, with no cloying flavors, but in the second half, a subtle umami flavor derived from the rice gradually spreads, and the aftertaste is clean and elegant.
It is an honest and reliable dry sake that goes well with sashimi, grilled fish, and salty Japanese dishes, and will not tire you out even if you drink many glasses of it.
