Rice polishing ratio 55%, alcohol content 16%, 100% Raku-fu-mai from Kanagawa Prefecture This year's newest sake is from the well-known Izumihashi. The brewery's limited-edition draft sake was purchased at a pre-sale at the brewery's direct sales store and opened immediately. Let's feel the new year begin. Unusually for Izumihashi, which is known for its crisp and dry sake, the aroma and taste are sweet like muscat. I dared to choose the nama-shu because it is sold in sake stores as a fire-aged type, but in fact, both nama-shu and fire-aged sake are said to be similar right after release, and the flavor of nama-shu changes and becomes sweeter as it is left on the shelf. It will be gone before that happens, though.
