Obuse Winery made this sake as a hobby.
The label on the back says, "After July 1, 2022, it may become a SAKE with a very maniac aroma and taste. Six months have passed, right?
The aroma is mellow, rich, and sweet. There is a slight sense of maturity, but it does not seem to be a pervert.
When you put it in your mouth, it has a slight sour-sweet-powan taste. Oh! It is fresh. Grape-like fruity acidity and sweetness. From there, umami comes in with a bang! The unique flavor, which is not part of the "sweet, delicious, acidic, and bitter" category, has a great presence.
The aftertaste is also sweet and umami.
It certainly has a maniacal taste. But it stays on the edge of perversity and is very unique. The flavor is strong and quite robust, but beautiful.
To use a Ghibli analogy, it is 20 years after the Okami-san from "Castle in the Sky". She is still 40 years old even after 20 years.
