Behind-the-scenes workers
GIN-UTA- is a collaboration between three Hiroshima sake breweries, each of which prepared two bottles, one spherically polished and the other shin-gin polished (flat polished), for a total of six bottles in the set. I bought it to compare the drinks.
The Shinrai spherical polished rice had an aroma reminiscent of melon. From a slightly mellow mouthfeel, it is a little neutral for a time, with a slight sweetness and acidity. Then the same kind of overtone and hint of aroma rises, stimulating the palate with a tangy taste, and then it quietly finishes with a slight bitterness.
Although the overall impression is not glamorous, both the aroma and the taste give the impression of a sake that is doing a good job. It was a sake like a behind-the-scenes worker that complements the meal.
