Sawanoi's Tokyo brewer. The aroma is a little tangy, without a gorgeous flavor. It has a robust flavor with plenty of umami, but the unique characteristics of the sake's traditional sake making process seem to have been well controlled. The mild acidity spreads and a strong astringent taste lingers on the back palate. It is recommended to be served at room temperature, but the temperature was too high for me to drink it cold.
