YSTJKangiku Occasional Leap Day - Special One
Junmai Daiginjo / Gohyakumangoku 29 Unfiltered Nama-shu.
This year, we have decided to pursue Kangiku, so we bottled the leap day following yesterday's sunny day!
This is a very special bottle that is bottled once every four years on the day of the leap day. This time, however, it is made from Chiba Prefecture's Gohyakumangoku, polished to 29%, in honor of the 29th of the month.
It is clear and free of any cloying taste, with a citrus-like acidity and a bitter aftertaste that is typical of Kangiku, giving it an endlessly refreshing impression. It is a bottle of the heart of the team that has grown up over the past four years!
