After tasting the sake at the Imadaiji Sake Brewery tour, I had no choice but to take it home with me! I bought a bottle of Junmai Daiginjo Autumn Agari. When I poured it into a glass, its aroma, reminiscent of fruits and flowers, spread out softly and made me think, "Oh, this is going to be a good evening drink today. The sweetness is moderately subdued, and the core aroma, which is typical of rice, follows afterwards. When you put it in your mouth, you first taste a soft sweetness. The rounded umami gradually spreads from there, and you can clearly see the corners have been removed by the power of maturation over the summer. It is refreshingly sharp when cooled, and moist and deep at room temperature...in other words, it is a "two-faced" sake. It has a light sharpness that does not make you tired of drinking, and it is a bottle that goes well with autumn dining and nature. When paired with grilled saury or persimmon salad, it is a match that will make you say, "Ah, I'm so glad I'm Japanese. I fell in love with this bottle after tasting it at a sake brewery and found myself holding it in my hand. It has a dangerous charm that makes you want to have another glass...or rather, another bottle 🤣 when you drink it on a long autumn evening.
