While strolling in Okutama, I went to Ozawa Sake Brewery to taste sake. Junmai Ginjo made from the traditional sake yeast. It has richness, acidity, umami, and a gorgeous aftertaste. It tastes even better when drunk while gazing at the Sawanoi Garden.
