I bought a bottle of sake from a sake brewery in Hachimantai, near Mount Iwate, that I had wanted to visit.
The aroma is grain-like, as is typical of sake. In the mouth, there is a sweetness and umami from the rice and a crisp bitterness at the end. The alcohol content is high, so you have to be careful when drinking it 😅I only know that it tastes sweet and elegant, so it's easy to drink.
This time, I served it with sashimi. It goes well with white meat, but I think it goes better with tuna, amberjack, or kanpachi.
