At Schneiper, Nagano, Japan. I found out later that it is also a Keishiki. It is supposed to be served on the first day of spring, which makes the toji (master brewer) cry, but it has a fruity and fresh taste suitable for early spring. The texture of umami lingers on the tongue. It's delicious!
