I bought a bottle of Kawanakajima Genmai at Yamazakiya in Eifukucho a while ago and tasted it on New Year's Day.
When the bottle was opened, it had a melon-like aroma, but it was not too bright and restrained.
When you put it in your mouth, the sweetness and umami spread out with a gusto, and then you feel a hint of sourness, but then it quickly fades away.
It is sweet but not too sweet, not too sour, and just delicious.
If I had to compare it to something, it would be like a grape.
This is another great sake.
I am not an omatist, but I was completely taken in by the complex flavor that is typical of Omachi.
It is best as an aperitif, as it tastes a little bitter when served during dinner.
I will drink it before a meal.
