Bodhi yeast brewing
Light nigori (light nigori). Tangy, sour, and sweet.
The sweetness is not mild, but it is sweet. This is sweet and sour. It tastes like old sake. You can feel the depth of the brewing process.
We would not recommend it to ginjo lovers, but would recommend it to lovers of old and unpasteurized sake with a strong sense of rice. I would like to try it again in August.
