Takachiyo's 59% polished sake rice series. Omachi. The only other Niigata sake brewery that I can think of that uses Omachi rice is Kamo Nishiki's Shifuda Sake, so this 59 series is noteworthy in that sense. It's like a ripe pineapple. Rich, a taste that cannot be found in traditional Niigata sake👍. If it tastes this good on the first day after opening the bottle, I will finish it before I even have a chance to try it. It's more like "what are you going to do if the taste goes any further❗️". It is a great wine to drink with marinated squid, small tomatoes and cheese, or filleted pork cutlet 😌. I'm trying to decide whether to call this sake "Takachiyo" or "Takachiyo" in terms of check-in. I know there are many ways to think about it, but I'll go with "Takachiyo". The second photo is the source. Sake of Uonuma... Choshamori, Takai, Midorikawa, Tama flavor, Tenjinbayashi, Matsunoi, Hakkaisan, Takachiyo, Tsururei, Shirataki (Kamizenyosui), and many others.
