On October 23rd, I visited the Naminoto Sake Brewery in Kata, Shiga Prefecture. The brewery runs a restaurant called Yohkaro, which is open only from June to September when the brewery is not making sake. The building was renovated from the previous owner's residence, and the location was perfect, with a view of Lake Biwa through the pine trees in the garden ✨. The fourth bottle served was a Junmai Ginjo Nakakumi, using Watafune rice with a milling ratio of 60% and an Alc of 17. The aroma was subdued and the flavor of the rice gradually spread in the mouth. There is no bitterness and it finishes crisp and clean.

Choroki-san, good evening 🐰 The fourth picture is funa-zushi, a specialty of Shiga Prefecture. I had it for the first time, but it has a strong sourness that is typical of fermented foods, and I think I could drink three glasses of sake with just one slice.
