The last of the trilogy will be this raw sake of Omachi and Yamada Nishiki.
The aroma is mainly sweet, with a chemically-intense aroma similar to Omachi, kumquat, and tangerine. The taste is also retro with moderate acidity and a sweet umami to bitter spiciness, and it has a modern classic/neo-classic quality that makes it versatile as a stand-alone sake or as a food sake 😋😋😋😋😋😋 Obviously the catch is modern and classic, but this one will be better liked by the experts. ☺️
