The attack is sour, spicy, acidic, umami, and rich. The top aroma is a little rose like cemedine, and after a while it becomes nutty like a baked sweet potato. The sweetness comes from the acidity. After rolling and swallowing, it leaves a strong umami taste on the tongue. A little astringency.
Slightly colored. Legs are weak and few. Middle-bodied.
