Banana-like aroma mixed with the same aroma as the first rise, firm rice flavor and soft sweetness spreads with citrus-like acidity, and finishes with a slight bitterness and alcohol spiciness.
The sweetness is not as strong as the sake level, but the umami of the rice is impressive, and the alcohol is noticeable and somewhat classical.
On the second day, the alcohol feeling is lessened and the acidity is more like that of white wine than citrus, giving it a nice, moist flavor.
It went well with "Buttered eel with rice topped with buttered rice" introduced on "Zawatsuku", ordinary eel bowl, Simmered Japanese butterbur and bamboo shoots, Potato salad, and so on.
It also went well with Tororo rice, sashimi of tuna and yellowtail, and grilled chicken wings and asparagus.
