It has the fruity aroma that Hanayo-yoku is known for, but it's a bit bitter. We felt that we had overstretched ourselves with the sake.
One week after opening, the taste changes drastically. The bitterness disappears, and the good balance of sweetness, umami, and sourness starts to appear, and the clean aftertaste disappears quickly.
