Shinshu Kamerei Miyamanishiki Junmai Ginjo
We chose this bottle for New Year's Eve.
The aroma is fruity, with a particularly strong impression of white peaches. It also has a strong sense of effervescence. It has an overwhelmingly sweet flavor with hints of pineapple, apple, peach, and chocolate. The bitter acidity has a strong impact at first, but slowly fades away.
The richness and rice flavor that seems to wear off but never does.
It is difficult to answer in a few words what makes Shinshu Kamerei Shinshu Kamerei, but I would say that it has an excellent balance of the five tastes centering on sweetness and umami.
It seems silly to analyze it anymore. It is simply delicious. That's all there is to it. That's what sake is all about, isn't it? This is a bottle that makes you feel that way again.
I hope I will be able to encounter another great sake next year!
