This place is amazing! Characteristics: An evolution of the San-do brand, brewed from a Meiji-era native species, "Kabako," cultivated under the "Shi-no-jo" standard of no pesticides or fertilizers, and brewed in a wooden vat using a traditional sake yeast yeast stock.
Taste Characteristics: The unique wild citrus flavor of "Kago" and the complex flavor from the wooden vat are harmonized beautifully at a low alcohol (13%).
Pairing suggestions: The grapefruit-like bitterness and acidity make it an excellent match for ethnic dishes and Mediterranean cuisine with lots of olive oil! This season, it would also be great with fatty fish with a strong squeeze of lemon.
