Comparison of Yamamoto's popular sake No. 6 and No. 7 yeast

Yamamoto No. 7 yeast is brewed with Ichibakusuisei yeast.
I have been drinking many bottles of Isshaku Suisei since I first got into sake, and I love it!
I have high expectations for how it will change with the No. 7 yeast and Yamamoto!
Although not as pronounced as the No. 6 yeast, I felt that the taste was a little lacking in fullness right after opening the bottle, but after letting it sit for a few days, it became much milder and more flavorful!
It was a fresh green apple type sweet and umami acidity that I felt from the first day, but when I opened it a few days later, it was mild, balanced, and delicious!
I won't say which one is better than the other, but both were tasty and contained Yamamoto's character, not Shinmasa or Isshaku Suisei.
