In a word, "Ojousama". I've never had Kinmon Nishiki before, but it's so elegant and mature! The aroma is modest. The aroma is subdued, with a nice mixture of fruitiness and rice-ness. The aroma is subdued. You can feel both coolness and a sense of luxury. Taste of melon and lychee. A bit of bitterness. It becomes easy to drink when it is heated up. But personally, I think the bitterness is the key, so chilling it in the refrigerator is the best way to drink it. It can be paired with relatively lightly-flavored dishes such as sashimi and chilled tofu, as well as with richly-flavored dishes such as boiled fish.
