The rice used for this sake is 100% "Iwai," a rare type of sake rice grown only in Kyoto. Water, koji, and yeast are all produced in Kyoto.
It has the freshness characteristic of freshly squeezed sake, with a full-bodied sweetness and umami taste. It has a smooth taste that can only be achieved with light nigori.
It has a rich and gorgeous aroma, which is created by using Kyoto yeast called "Ki no Koto.
