There is no change in taste and mouthfeel on the second day.
After the third day, it seems to have settled down, and the umami flavor has become more intense, and the spiciness and bitterness have disappeared.
It is a good sake that does not interfere with meals.
I paired this sake with gourmet chicken skin simmered in miso and fried oysters from Kure, where the sake brewery is located.
And of course, the sausages were paired with German beer.
Sake and beer are both delicious.
