As the name "high acidity sake" implies, it has a strong sourness on the palate.
It is not unpleasantly sour, but citrusy sweet and sour,
It flows smoothly.
The acidity is strong, but it is well balanced with bitterness and has a good sharpness.
It is said to be one of the driest of the Shinsei varieties,
