The neo. series is made by young brewers, from planning to production to label design. This year, the brewery's rice growers and a farmer who is also a brewer were the main producers. The Yamahai Junmai Daiginjo, made with Hyakumangoku No Shiro from the local Yamashima district of Hakusan City, which they grew themselves, is dry with a gassy taste that evokes the image of a "stylish farmer.
It is carefully brewed using the Yamahai brewing method, a specialty of Noto Toji.
