Junmai sake stored in ice and snow. This may be the first sake stored in ice and snow! Harmony of umami and acidity. The effect of the ice and snow storage also makes it mellow. The sake brewer here is aiming for a rich, dry sake, and is also emphasizing the balance of the five tastes. This sake really is just as they say. I thought that richness and dryness might be at odds with each other, but that was not the case at all. It is rich but has a crisp aftertaste. This kind of sake is also good! I forgot to take a picture of it at this booth, but I also had a Junmai Ginjyo (Junmai Ginjo) Nama Hashiroshi. I could feel more five flavors in this one.
