In the cold state, the aroma and mouthfeel have a slight spike of alcohol, but it is not so unpleasant, and the sweetness soon arrives. If anything, it has a unique sweetness and flavor similar to that of old sake.
When the sake is cooled down to about chilled temperature, the alcohol content is removed, and the unique sweetness, thickening, and faint koji (malted rice) taste that is similar to that of old sake are more and more noticeable.
