Welcome to your first Boshimaya, White Koji series 🤗.
It has a slightly classical, mature and calm flavor, slightly reminiscent of miso and soy sauce. It has a slight gassy feeling, minerality, and a deep umami and richness that spreads out gradually. The taste is rounded out by a lingering acidity that seems to support the cohesiveness of the palate.
The next day and the day after that, the wine becomes more rounded as the days go by. The cocoa sensation appears 😳.
