Now, here is the second bottle, Gin Kame. It is a Junmai Daiginjo made with Miyamanishiki from Nagano Prefecture polished to 39%. It's been sitting in the fridge since March. I just opened the bottle and it has almost no aroma or taste. I took a little time to let it sit and play. After about 30 minutes, it smells fruity, reminiscent of pears. The fine bubbles pop on the tongue, and the grapefruit-like light sweetness and refreshing acidity are wonderful. It is round, deep, and full of flavor, and you can feel it softly. The bitterness of the citrus peel that comes later is also pleasant. Elegant taste, beautiful! The sake brewed by Ms. Bitsuri and Mr. Kenichi is the best!
