Sake from Noto has an image of being robust and dry. The other day, an in-house booklet on the Shinkansen featured a special section on sake in Ishikawa Prefecture, and several breweries were mentioned in the article about the future of Noto's sake. One of them is Kurumata Shuzo. One of them is Kurumata Shuzo ๐Ÿถ, which has been brewing sake in collaboration with several other sake breweries since the earthquake, and has become a bridge to recovery. The sake is impressive for its clear texture without much sweetness. It is refreshing and has a truly "dignified" atmosphere. It is characterized by the "strong flavor favored by fishermen," which is perhaps unique to Noto sake, as described in the booklet. The label design and calligraphy are very beautiful and refreshing.
