This junmai sake is made with a low rice polishing ratio, but with a slow fermentation process at a low temperature to express the full flavor of the rice. The acidic taste makes it a perfect match for Japanese cuisine as well as meat dishes. It is excellent when heated. I thought it was so-so. I think I like "Yawaraka" better.
