When I talked with the brewer at the Takashimaya Department Store in Kyoto about how impressed he was with the fire-roasted sake, he told me that they also make a made-to-order sake with the same name.
I contacted him immediately and got it.
The color is a light greenish yellow.
The aroma is mild and slightly sweet.
The mouthfeel is smooth and fine.
The sweetness of the rice is delicate and gentle, and the flavor is elegant, yet fresh and voluminous. The acidity, which is characteristic of sake yeast yeast yeast, is mellow, with a slightly nutty, dried fruitiness, giving it depth and complexity. I like it much more than I expected. I would like to repeat the taste.
The overall taste is mellow for its alcohol content, with a tangy aftertaste that is quickly quenched.
