This is the second bottle of Jikin from Imadeya's hanpukai.
I opened the bottle to see how it would be after about half a year of aging!
The beautiful flavor and sweetness of Jikin is still there, but the impression is that it has become slightly sweeter.
It has always been a sweet sake, but I might believe it even if it were called a kijoshu. It is that beautifully sweet.
It also has a banana-like fruity flavor, making it a very easy-drinking sake.
Since Jikin was a raw sake, the second bottle was limited to half a year, but I have had the opportunity to taste various other rare sakes, so I look forward to more in the future.
