This bottle is made from improved Omachi grown without pesticides, and is made using a yeast-less sake brewing method. It has an impressive flavor that is somewhat rustic, yet has a solid core. When heated, the aroma of grain and gentle umami spreads, and the taste is soothing and gradually sinks into the body. The acidity is mild and not too heavy, making it a good match with meals. It is also good with cheese and fermented snacks. It is not "thick" but "strong," with a toughness and an honest taste that reminds one of the scenery of rice paddies. It is delicious at room temperature, but we also recommend "heating it up" and then "cooling it down. It is a warm sake that will melt your heart.
