From Shinmasa Sake Brewery in Akita, Japan, this is "viridian" from colors. By the way, "Tengaju" seems to mean velvet or velvet. The appearance is crystal with slight yellow tints. The aroma is beautiful, with hints of muscat and melon, like a refined white wine. On the palate, there is a pleasant chouxiness. The nose also has a hint of green grassy aroma. The wine finishes with a fine, light acidity. The beautiful and delicate acidity and umami are accompanied by a light, but not thin, pleasant sweetness that disappears in a flash. The back palate has a slight bitterness, but it is washed away and reset by the light acidity and gassiness. It seems as if you could drink it indefinitely. Anyway, I felt it was a wonderful sake, light but not thin, with the softness of a wooden barrel brewing process. Thank you for the treat 🍶.
