This time last year, I was looking for a new sake and tried this relatively easy to find Chiebijin for the first time 😆.
It seems to be their first attempt at a genre called Nama-juku, where they mature the raw sake by letting it sit for 6 months. I guess it's like doing the same thing at home where you mature and enjoy the raw sake at the brewery😃It's sweet and fruity with a slight chilli flavor, personally it tastes like Kawanakajima Genmai and is very delicious 😋.
