It's a fresh-tasting, unpasteurized sake, gently squeezed through a honeycomb press. It has a clean, round texture that is typical of Tanaka Rokugo, even though it is unpasteurized, and it has a smooth, refreshing acidity. The origin of the brand name, which is unforgettable once you've heard it, comes from the brewer's surname and the location of the brewery, where the brewery is located in a field of Yamada-nishiki paddies. After much trial and error, we arrived at Rokugo, a rice polishing ratio that we are confident will bring out the best flavor. It's a simple name that succinctly expresses the concept, but it's filled with a lot of thought.
