In terms of rice polishing ratio, this 49% polished rice ginjo-shu could be called a daiginjo.
The aroma is subdued but gorgeous, and the nose is filled with the aroma of rice.
The taste is gentle, but the umami is very strong.
It tastes like chewed rice and has a clean mouthfeel with no lingering aftertaste.
I drank it almost at room temperature, but I think this is the best sake.
It might shine even when heated.
