Since it is the season of cherry blossoms, it is Tamasakura🌸.
First, it is served a little cold.
The color is clearly yellowish.
The top aroma is highly volatile, like magic ink.
I thought it was bitter chocolate and almond-like and had a sense of maturity, so I looked online and found that it is aged and shipped unfiltered.
The dark flavor and tangy pungency mix and assert themselves, and there is little sense of unity.
I will drink it warmed.
When heated to 45 degrees Celsius, the flavor was so rich and delicious that it almost made me think it was dashi. The flavor is so rich that you'd think it was dashi (Japanese soup stock), and the almondiness is still there, but it's mildly spicy and sharp.
The aftertaste is tightened and integrated with the sourness and spiciness.
