<Sweet, sour, bitter, with a hint of lemon, a new innovation.
This is a sake from LIBROM Craft Sake Brewery, a new brewery that just opened in Fukuoka this year. It is classified as "other brewed sake".
It is almost impossible to get a new license to make sake. So by adding secondary ingredients in addition to the rice and rice 麴, it's removed from the sake classification.
The aroma is almost imperceptible.
On the palate, it's lightly sweet and sour. The lemon taste starts to appear in the middle, but it is more of a hint than a taste. The acidity is not that strong. It is a beautiful sake.
The aftertaste disappears softly. Rather than being crisp, it disappears comfortably. It's delicious!
If you compare it to Ghibli, it's like Kopel-kun from "How Will You Live? Sorry, it's a work that hasn't been completed yet, and is scheduled to be finished in 2023. So, Kopel-kun is a character from the original novel. He's brilliant but mischievous. In the novel, I depict such a main character who grows up as a human being through his troubles.
