This is a gift that I received to celebrate my birthday as well as the end of my job hunting activities.
At the three-year stage of aging, the fresh flavor is exquisitely preserved, yet the soft sweetness and round texture spreads throughout the mouth.
As the aging progresses to five years, ten years, and twenty years, a sweetness like burnt caramel, bitterness, acidity, richness like crushed nuts, and a flavor reminiscent of soy sauce are produced.
The 20 year old is particularly special, and all the elements are not canceled out, but are still alive in the taste center.
It is difficult for me to choose a word to describe the unique flavor of old sake, because I have never tasted old sake before, but I felt the nostalgia and the smell of the brewery very strongly.
